High School: Jackson played defensive end and running back at Canyon Del Oro High School in Oro Valley, Ariz., near Tucson. He was credited with 30 tackles, six tackles for loss, three sacks and 10 quarterback hurries his senior season. On offense, he added five rushing attempts for 34 yards and caught 10 passes for 218 yards, including catching two touchdown passes. He helped lead Canyon Del Oro to a 10-2 record and a 5-0 record in Section 5 of Division III to place first in their Section. Canyon Del Oro entered the 2013 Division III State Playoffs as the No. 8 seed in the 16-team field. They defeated Higley, 34-31, in the First Round of the State Playoffs before losing to Williams Field, 26-29, in the quarterfinals of state. His junior season, Jackson recorded 22 tackles, including five tackles for loss and seven quarterback hurries, while rushing for 120 yards and one TD and catching three passes for 34 yards. Jackson was mentioned in a story by ArizonaVarsity.com titled "Hot 11 Steals" that highlighted 11 under-recruited players from the state of Arizona who have bright futures in college football. He played at the same high school at which 2013 Consensus All-America running back Ka'Deem Carey of the University of Arizona played. Jackson's head coach at Canyon Del Oro High was Dustin Peace.

Jackson was also recruited by New Mexico State and San Diego State.
